Typically I take my photos by hand (without a tripod). I started off using the bundled Panorama editor to make QuickTime VR movies, but I subsequently found the excellent PixAround software package. While it isn't free anymore, the benefit of PixAround is the small (15K) Java applet, instead of the big QuickTime plug-in.
I've found that using my camera's worst quality pictures (1024×768), a complete set of around 20 photos for a 360° panorama takes the same space as three best-quality photos. Best of all, since panoramas tend to end up quite small, the lesser quality is not noticeable!

IPIX (Interactive Pictures Corporation) have shut down Helmut Dersch's web site (mirror), where he provided software to create and display panoramas of all sorts, including spherical projections. IPIX have apparently been granted patents related to spherical projections and have been shutting down many sites that provide spherical panorama projection software - Helmut isn't the only one!
